Why “Food Grade" or “Outdoor Grade" Is Not Enough

Turkish buyers comparing stainless steel sheet or stainless steel coil often start with 304 and 316L. Both are austenitic stainless steels, but “food grade" and “outdoor grade" are not complete procurement specifications. Grade selection should also consider the contact medium, chloride or salt exposure, cleaning chemicals, temperature, time-of-wetness, weld design, drainage, and surface condition. The alloy provides the material basis; equipment design and maintenance conditions also influence service performance.

304 for General Food Equipment and Controlled Indoor Use

Under ASTM A240 sheet and strip requirements, 304 (UNS S30400) contains 18.0–20.0% chromium and 8.0–10.5% nickel, with carbon limited to 0.08% maximum. It is commonly evaluated for worktables, equipment housings, storage components, and general kitchen equipment that can be cleaned and dried. Where chloride exposure is low, cleaning residues are rinsed away, and salt water does not remain on the surface, 304 can be a practical starting point for technical review.

316L for Higher Chloride Risk and Welded Assemblies

ASTM A240 specifies 16.0–18.0% chromium, 10.0–14.0% nickel, and 2.0–3.0% molybdenum for 316L (UNS S31603), with carbon limited to 0.03% maximum. Molybdenum makes 316L more suitable for evaluation where salt, chloride-bearing cleaners, coastal air, or brine splash is present. Its low carbon limit is also relevant to welded structures. However, 316L is not corrosion-proof: salt deposits, crevices, poor drainage, and unsuitable cleaning practices still require control.

Food Processing: Work Backward from Media and Cleaning

For bakery, dry-food, and general preparation equipment, buyers can first assess 304. Processes involving brine, pickling liquids, chloride-containing cleaners, or frequent wet cleaning require a closer evaluation of 316L. The RFQ should identify the food or process medium, cleaner name or principal chemistry, operating temperature, contact duration, and rinsing method. For welded equipment, specify post-weld cleaning, pickling, or passivation instead of treating the base grade as a substitute for hygienic design.

Outdoor Equipment: Separate Inland and Coastal Exposure

A sheltered installation in an inland city such as Ankara differs from coastal exposure around the Aegean, Mediterranean, or Marmara regions. For inland outdoor cabinets, 304 may be assessed when rain protection, drainage, and routine cleaning are defined. Coastal equipment, poolside components, or locations exposed to salt spray or de-icing salts normally justify evaluating 316L. Buyers should still document distance from the coast, direct rainfall, water-trapping crevices, cleaning frequency, and expected maintenance.

What Should a Sheet or Coil RFQ Include?
Standard, Dimensions, Finish, and Documents

State 304 or 316L with the corresponding UNS or EN designation and identify ASTM A240 or EN 10088 as applicable. Add sheet or coil form, thickness, width, length or coil weight, tolerances, edge condition, and finish. Food equipment may use 2B or a specified polished surface; decorative outdoor panels may require a directional No.4 finish, protective film, and an approved limit sample. At receipt, match the MTC, heat number, coil number, package label, and purchase specification.

Fabrication Route and Acceptance Conditions

Bending, deep drawing, laser cutting, and welding can change edges, stresses, and surface condition. Provide the forming method, minimum bend radius, welding process, and final surface treatment, then confirm the route with sample parts before mass production. Incoming checks may cover thickness, width, flatness, surface marks, grain direction, chemistry documentation, and moisture-protective packing. Acceptance limits should come from the contract standard or an agreed physical sample.

Conclusion: Let Exposure Conditions Decide

304 suits many general food-equipment and controlled inland applications. 316L is a stronger candidate where salt, chlorides, coastal air, or welded corrosion-sensitive structures are part of the operating conditions. Turkish buyers should compare more than grade price: define the media, temperature, cleaning program, welding, drainage, finish, and maintenance plan, then select stainless steel sheet or coil against those documented conditions.
